Move over plain old corn muffin, there’s a new kid in town! (I’m sorry, don’t know where these things come from sometimes.) This muffin has raisins in it that have been plumped up by heating them in the coconut oil I used, Full fat coconut milk replaces dairy milk. Then ground flax seed was used instead of an egg so this is a healthy, vegan, delicious breakfast for Sunday morning tomorrow! Have them still warm with some vegan butter (Love Earth Balance!) or spread on your favorite jelly or jam!! Plain is good, too! I’ve had three myself so far and that is soooo not me!!
