Hello, friends! First I’d like to say sorry about the gap between post. Stuff on the homestead needed tending to but things are getting better so I’m back in the game! Now secondly, this almond butter stuff is delish! Where have you been all my life?
Let me say, when I was a little girl I remember seeing a jar of peanut butter and couldn’t for the life of me figure out why someone would get that. There was oil sitting on top. Where’s the Skippy? I was informed it was homemade peanut butter made right there (Some little tourist trap store somewhere in New Hampshire.). Fast forward 30+ years and now all I buy is natural. Very fortunate our local big chain store’s name brand natural peanut butter is a very good price. When I say natural I mean 100% peanuts, no salt, no added oil. Sadly it would cost me twice as much to make my own peanut butter. I’ve been dying to try almond butter but it goes for $8 a jar! That’ll be the day! But when I had two coupons for any size container almonds I jumped at the deal so I finally get to try it!
So I get the cans of almonds and absolutely can not wait to make this!! A month later I finally make it. Came out great! All I used is almonds. You may hear people adding oil or salt. I didn’t find it necessary.
As I said it’s super easy. Just throw the almonds into your food processor (or blender, although I don’t know how well it would work, but if that’s all you have definitly try it! :)) and process away! Now, like I said mine is a mini B&D 1.5 cup that has a button you hold down, not an on/off switch so it definitly took me longer than if I had a regular processor. Keep at it, processing and scraping the sides and the bottom. Tedious? Maybe to some, but totally worth it! Be patient, it takes a while for something as hard as an almond to turn into something delicious and creamy! And creamy it was after about 30 minutes or so. You can also use pistacios, cashews, pecans, macadamia nuts. Or try combining them!
So far I’ve only had it on PB&J, or AB&J ;), and with sliced banana. Yum!! Now plan to head on over to Walgreens, starting tomorrow, Blue Diamond Almonds, 6 oz., B1G1 free! Those are the ones I used! And Walgreens brand Nice! Select Nuts, $3.99. You need the rewards card for the sale price.
