Hello my friends! Today’s post is quite simple, albeit D-Lish-Us! A more grown up candy than Tootsie Rolls, it’s Chocolate Covered Toffee with Almonds!! I never knew it was so easy to recreate, at home, my second fave candy bar, Heath bar {my first is 3 Musketeers!}. Have to admit, I was a bit nervous. I’ve never made candy before and for some silly reason, I’m intimidated by the thermometer. Yes, you read right, the thermometer makes me nervous and I think it’s because you have to be exact with every step. Too much heat and it burns, not enough heat and candy won’t set correctly. Ingredients and directions need to be exact. If recipe says to stir constantly, stir constantly! {lesson learned there
} Well, enough of that, I got over my fear and just did it! I couldn’t be more pleased with the results and I hope you enjoy it too!
Chocolate Covered Toffee with Almonds
- Parchment paper or aluminum foil
- Veggie cooking spray
- 1 1/4 cups vegan butter {love Earth Balance}
- 1 cup sugar
- 1/3 cup packed light brown sugar
- 1 tbsp dark unsulphured molasses
- 1/2 tsp salt
- 1/3 cup water
- 1 cup sliced almonds
- 1 cup vegan dark chocolate morsels
- 1 cup vegan semisweet chocolate morsels
- Line 15 x 10 inch jelly-roll sheet with foil or parchment paper. Spray a light coat of the cooking spray.
- In large sauce pan melt butter over medium heat. Add the sugars, molasses, salt and water. Stir constantly! For about 18-21 minutes until a candy thermometer reads 290°F (soft crack stage).
- Remove from heat, stir in almonds and immediately pour onto the pan. Smooth out to a nice even layer. {Tip: I used a spatula and sprayed it with cooking spray so the toffee doesn’t stick to it.}
- Mix the chocolate morsels in a bowl so they’ll be evenly distributed. Sprinkle the morsels over the top. Wait 5 minutes and then spread the chocolate around using a spatula.
- Chill at least an hour, until firm. Break into pieces and will keep for up to 7 days {Won’t last that long!!
} in the fridge in airtight container.
